Albacore
This is a fresh albacore seared and sliced.
You can see from the picture that the contrast
between the seared part and the raw part is
beautiful. Depending on the color, the texture
changes too. The fish itself is very soft, and
it glides over your tongue. There is a jalapeno
slice on each slice, and accentuates the freshness
of the albacore. The sauce used is garlic ponzu.
You can tangle the thinly sliced white onion
in the sauce and enjoy it with the albacore.
It also matches the sesame seeds sprinkled on
