Roasted Chilean Sea Bass
The homemade sea bass marinated in sake lees will spread happiness in your mouth as soon as you bite into it. The particular care of how much sake lees was used, and how long it was marinated, has erased the extra oil and fish smell, and brings out the deliciousness of the sea bass to its fullest. And the soft, richly flavored atsuage (deeply fried tofu) surrounds it warmly. The strong taste of the soybeans mixes with the rich, slightly sweet sauce and makes perfect harmony. The contrast of the fried vegetables is colorful and aesthetically pleasing and will stimulate your appetite. The fresh texture of the vegetables enhances the taste of the sea bass. You can definitely see the chef¡Çs skill and taste in this dish.
Sashimi Sampler Plate
The sashimi sampler plate provides the best fish of the day. Of course, this is also arranged KANPAI style so you can enjoy it to the fullest. This day they had freshly imported hirame(flatfish) from Japan, salmon, and kanpachi(amberjack) laid out on the plate. For example the hirame was stimulated with yuzu pepper and bright a red pepper berry (spice), but at the same time yuzu juice makes it a fresh aftertaste. Next to it are 4 items from the specials sushi of the regular menu. Every one of them is creatively prepared. For example, one uses butter, and the salmon is mixed with basil sauce.
